MAKE-AHEAD MASHED POTATOES


Keep these prepared potatoes in the refrigerator for up to 3 days before you need them!
Ingredients:
8-10 medium sized baking potatoes, peeled and boiled till tender
1 cup sour cream
1-8 oz package cream cheese, softened
4 tablespoons butter or margarine
1/3 cup chopped chives
salt and pepper to taste
grated Parmesan cheese
 
Directions:
1.  Beat the sour cream and cream cheese together.

2.  Add the hot, drained potatoes. Beat until smooth.

3.  Add the butter, optional chives, salt and pepper. Dot with butter and sprinkle with cheese.

4.  Refrigerate for up to 2-3 days.  When ready to serve, bake at 350 degrees for 25 minutes, until golden. Serves: 8-10
