PIPAU'S CORNBREAD

Ingredients:
2 cups self-rising cornmeal
1 cup buttermilk
1/2 cup water
2 1/2 T shortening (use non-trans fat if you can)
1 oven safe skillet, preferably an iron skillet
Butter
 
Directions:
Preheat oven to 450 degrees.

1.  Miix buttermilk, water, eggs, and cornmeal.

2.  Melt shortening in skillet on stove. When it is totally melted, sprinkle 1 T cornmeal.

3.  Put 1/2 to 3/4 of melted shortening in cornmeal mix and stir. Pour mix into skillet. Bake in oven at 450 degrees for 25 to 30 minutes until golden brown. Serve with fresh butter.
