DIRTY RICE (aka Rice Dressing)

This is an old Cajun recipe from his wife Claudia's mom, Betty Jean Fontenot
Ingredients:  
1 lb. lean ground pork
1 lb. lean ground beef
1 chopped onion
salt and pepper to taste
½ can cream of mushroom soup, undiluted
2 cups cooked rice
¼ cup green onion, chopped
2 Tablespoons parsley, chopped
 
Directions:


1.  Cook pork, beef and onion in skillet.

2.  When almost fully cooked, add salt and pepper, soup and rice. Continue to cook until texture is thick and a little creamy.

3.  When completely cooked, add green onion and parsley and stir.

Dirty Rice is served EVERY Christmas and throughout the year in Louisiana as a side dish with roast duck or any other meat.

1. Jaboulet Parallel 45 - 2001 - Cotes Du Rhone

This is an excellent, affordable red wine that has a lighter body and is very smooth.

2. d'Arenberg - The Stump Jump - Grenache/Shiraz/Mourvedre

Jimmy and Lorianne really liked the spicy nature of this wine with the Dirty Rice.

3. Red Truck - Cline Cellars - Primarily Syrah and Mourvedre

Another great red table wine that can stand up to Cajun dishes.
