BAILEY'S BREAD AND BUTTER PUDDING

Ingredients:
1/2 loaf pre-sliced white bread, crusts removed
4 tablespoons softened butter
1 cup granulated sugar
1 teaspoon vanilla extract
4 eggs
2 1/4 cups heavy cream
2 cups milk
4 shots Baileys Irish Cream Liqueur
5 bananas, sliced lengthwise into thin strips
4 tablespoons toasted, slivered almonds
Confectioners sugar to dust
vanilla bean ice cream
Directions:
Preheat oven to 350 degrees.
1. Flatten each slice of bread as much as possible. Butter each piece thinly with softened butter. Cut pieces in half and set aside.
2. In bowl whisk sugar, vanilla, eggs until pale and fluffy. Add cream, milk and Baileys and whisk until smooth.
3. Take an appropriate size bake dish (9 x 12) and rub sides with a little butter. Dip each piece of bread in egg mixture and layer bread, sliced banana and almonds in baking dish.....repeat until everything is used up leaving top layer of bread
4. Pour in rest of egg mixture to fill the dish and pat down to make sure the break soaks up all the mixture. Dust top with confectioners sugar.
5. Bake for 35 min. or until custard is set with a wobbly center. Allow to cool until warm.
This is greaet served with Vanilla Bean Ice Cream!
