Position a rack in the center of the oven and preheat to 300 degrees.
1. In a medium bowl, whisk the egg white, sugar and salt until very foamy.
2. Whisk in the cinnamon, ginger, nutmeg and cloves.
3. Add the walnuts and stir to coat.
4. Spread the nuts on an ungreased baking sheet. Bake for 10 minutes.
5. Stir and separate any walnuts that are sticking together. Bake for another 10 minutes.
6. Stir and continue baking until the coating is dry and walnuts are crispy, 5-10 minutes.
Cool completely.
