Directions: |
1. In a medium bowl, beat the egg whites until very stiff and set aside.
2. In a large bowl, add egg yolks, vegetable or olive oil, and milk. Beat with a hand mixer until combined.
3. In a separate bowl, combine the flour, baking powder, and salt. Add the dry mixture to the wet mixture one cup at at time, beating with the hand mixer, leaving it slightly lumpy. Do not over mix. The batter will be fairly thick. Fold in the egg whites.
4. Pour into a hot, greased waffle iron and cook to desired doneness. Serve with homemade syrup (recipe to follow), or store bought syrup. Other tasty toppings are peanut butter, almond butter, and strawberries and whipped cream. |
