WHOLE WHEAT WAFFLES and HOMEMADE MAPLE SYRUP

Waffles
Ingredients:
3 cups whole wheat four
1 heaping tablespoon baking powder
1 teaspoon salt
4 eggs, separated
1/3 cup vegetable oil or olive oil
2 1/2 cups 2% or whole milk
 
Directions:
1.  In a medium bowl, beat the egg whites until very stiff and set aside.

2.  In a large bowl, add egg yolks, vegetable or olive oil, and milk. Beat with a hand mixer until combined.

3.  In a separate bowl, combine the flour, baking powder, and salt. Add the dry mixture to the wet mixture one cup at at time, beating with the hand mixer, leaving it slightly lumpy. Do not over mix. The batter will be fairly thick. Fold in the egg whites.

4.  Pour into a hot, greased waffle iron and cook to desired doneness. Serve with homemade syrup (recipe to follow), or store bought syrup. Other tasty toppings are peanut butter, almond butter, and strawberries and whipped cream.
Dan's Family Homemade Syrup
Ingredients:
1 1/2 cup brown sugar
1/2 cup white sugar
1 cup water
1/2 teaspoon maple flavoring
Directions:
1.  Bring the water to a boil in a small saucepan.

2.  Add the brown sugar and stir until dissolved. Add the white sugar and stir until dissolved.

3.  Add maple flavoring and continue to boil, stirring occasionally. Cook for 3 to 5 minutes, then serve over waffles or pancakes.

The syrup will be very thin and runny. If you like a thicker syrup, make this recipe three days in advance and refrigerate. The syrup with become thicker as it chills in the refrigerator.
