VEGETARIAN CROQUETTES

Ingredients:
3 medium potatoes, peeled and roughly chopped
1 tablespoon butter
salt and pepper to taste
3/4 cup broccoli, cut into small florets
1/2 cup finely chopped carrots
1/2 cup frozen or canned corn
2 ounces cheddar cheese, cut into 8 equal pieces
potato chips, crushed
 
Directions: Preheat oven to 350 degrees.

1. Bring a pot of lightly salted water to a boil, add the potatoes, and cook until tender. Drain and mash with butter, salt, and pepper.

2.  Place vegetables in a steamer and cook until tender, about 6-7 minutes. Mix with the mashed potatoes.

3.  When the mixture is cool enough to handle, using your hands shape the potato/vegetable mixture into a patty, add a piece of the cheese, and form the patty around the cheese into a croquette. You should be able to make about 8 large croquettes.

4.  Roll each croquette in the crushed chips until well coated. Place on a baking sheet and bake for 10 - 15 minutes. Serve!

NOTES: These croquettes are suitable for freezing. It is a great recipe for kids and adults alike and is a rich source of beta-carotene, calcium, fiber, folic acid, protein, and vitamins B12 and C! If you are vegetarian, you can serve these with a salad. If you are a meat lover, they would go great with meatloaf or baked chicken!
