Preheat oven to 400 degrees.
1. In a a ziploc bag, add flour, pepper, salt, garlic powder, and onion powder. Shake well to combine. Add pork in small batches, shaking well to coat meat. Brown meat in a small amount of olive oil. The meat does not need to be cooked through (it will continue cooking in the oven).
2. Place the browned meat in 9 x 12 casserole dish to cover the bottom. Layer the onion slices across top of meat, sprinkle salt and pepper to taste. Then layer the potatoes, sprinkling again with salt and pepper. Sprinkle half of the parmesan on top of potatoes. Pour beef broth over the top, then sprinkle with the remaining parmesan cheese.
3. Cover with foil and bake for 1 hour. Serve with a salad, and you have a complete meal! |
