Saute choped onion in olive oil, then stir in ground beef and cook until browned. Add salt and freshly ground black pepper. (Joe likes lots of black pepper!) Stir the taco seasoning into a bowl with enough water to dissolve it, then stir it into the beef. Joe says you can also add a little milk at this point, if you want the mixture to be creamy.
In a bowl, put shredded lettuce. Crumble a handful of tortilla chips on top of the lettuce, then pour some of the meat mixture over that. Top with shredded cheese, olives and any other toppings you would enjoy. (Lorianne added some chunky guacamole!) Add some dressing, and enjoy!
