TEQUILA LIME SHRIMP

Ingredients:
2 lbs medium shrimp (more or less depending on number of diners)
1 shot tequila (preferably, of course, Jose Cuervo!)
1 jicama, a Mexican root vegetable that has an apple flavor, finely chopped
1 bunch cilantro, finely chopped
1 medium yellow onion, finely chopped
1/2 cup vegetable oil
1 lime, juice only
 
Directions:
1.  Boil the shrimp, then cool and peel.

2.  Mix the other ingredients into a marinade and add the cooled shrimp, along with the marinade, in a plastic bag. Chill for two hours.

3.  Eat the shrimp as an hors d'oeuvre or warm them as Tracy does and try them as a taco in a corn or flour tortilla. Add purple and green cabbage and Pico de Gallo for a tasty taco treat! Ole!
