GREEK SPINACH WITH RICE

Recipe
Ingredients:
1 medium chopped onion or 4-5 chopped scallions
Salt and pepper to taste
2 shakes ground cinnamon
1 to 3 Tablespoons olive oil
1 7-ounce can Hunt's tomato sauce
3 cups water
18 ounces fresh or frozen spinach (Fresh spinach can be washed and frozen
      for future use. This recipe is better with fresh spinach.)
1 clove garlic, chopped or crushed
½ cup uncooked rice (or more if you prefer)
 
Directions:


1.  In a 4 quart saucepan combine onions, salt and pepper, cinnamon, olive oil, garlic and tomato sauce. Add 3 cups water and bring to a boil.

2.  Add spinach and reduce heat to low. Cover with lid ajar and cook for about 20 minutes-- stirring occasionally.

3.  Add ½ cup uncooked rice (or more if you prefer) into spinach mixture. Bring to a boil, and then reduce to low. Simmer until rice is cooked - stirring occasionally.

Note: This is excellent by itself as a vegetarian dish, or it can be served as a side dish alongside Crystal's Greek Meatballs (Keftiethes).
