SWEET POTATO BISCUITS

Get the butter ready!!
Ingredients: 1 lb. plus 4 ounces All Purpose Flour
2 tsp salt
1 ounce sugar
1 ounce baking powder
7 ounces butter, cold and cubed
13 ounces milk
6 ounces cooked or canned sweet potato

 
Directions: Pre-heat oven to 350 degrees.

1. Place all dry ingredients in a food processor bowl with paddle attachment.

2. Add cold, cubed butter and mix on speed #1 until the butter is broken up and the mixture feels like powder. If the butter is cold, this step could take as long as 10 minutes. If the mixture forms a ball, you have over-mixed and must start again.

3. Add sweet potato, then milk while mixing on speed #1, until the dough is sticky but not wet.

4. Place on floured surface and roll out ½” thick, cut with biscuit cutter and place on sheet pan. Bake at 350 degrees for 18 minutes or until golden brown. Brush with melted butter once out of the oven.





Makes 18 biscuits.
