Directions: |
1. Slice each shrimp down the "stomach" side and pull out the vein. (Most stores will clean and devein the shrimp for you and that will save some time.) The shrimp should then lay open in a butterfly.
2. Place crumbled goat cheese inside the butterflied shrimp, close the sides together and roll a piece of prociutto around it. Secure with toothpick. Repeat for each shrimp.
3. Place several shrimp on a skewer and grill over medium heat, sprinkling pepper lightly over shrimp. Turn skewers occasionally to make sure that shrimp are evenly cooked. Shrimp is done when it is golden brown and the goat cheese is slightly oozing. Remove skewers and toothpicks and serve!
