SQUASH CASSEROLE

Ingredients:
10-12 medium sized yellow squash
1 can cream of chicken soup
1 small vidalia onion (finely chopped)
1 cup sharp cheddar cheese (grated), divided in half
1/2 cup sour cream
1 small jalapeno pepper
salt & pepper
 
Directions:
1.  Slice squash and boil until tender. Drain, and lightly press cooked squash to remove excess water.

2.  Mix with all other ingredients, saving 1/2 cup of cheese for topping.

3.  Put in casserole dish. Top with remaining cheese. Bake at 350 for 30 minutes.
