Ingredients: |
1 frozen pizza crust
1/2 - 1 lb cooked chicken, diced or pulled into bite-size pieces. (For a little
"heat", add a dash of cayenne pepper to the chicken as it's cooking. And
we mean just a dash!
1/2 cup canned black beans, drained and rinsed
1/2 cup canned corn (low sodium), drained
shredded Monterey Jack cheese, to taste
your favorite barbecue sauce

Directions: |
Pre-heat oven to 450 degrees.
1. To frozen or thawed pizza crust, add the barbecue sauce and spread close to the edges.
2. Top with grilled chicken, black beans, corn, and cheese, to taste. Lorianne sometimes also adds diced artichokes or sliced fresh roma tomatoes.
3. Bake until the cheese is melted and slightly bubbly. If desired, serve with cracked red chili pepper for a big kick!
