POACHED SALMON IN ORANGE SAUCE

Ingredients:
2 cups orange juice
2 1/2 lb salmon filets (skin removed)
1 red onion, sliced
 
Directions:


1.  Place fish in a frying pan. Pour orange juice over fish until it covers half the thickness of the filets.

2.  Place one slice (about 1/8 of an inch) of red onion on top of each serving of fish.

3.  Cook over medium heat, covered, until flaky (will depend upon thickness of fish) about 5-10 minutes per inch of thickness.

4.  Remove fish to a warm plate, and reduce orange sauce by simmering until it becomes thick.  Watch so it doesn't burn. Pour over fish and serve!
