OLD FASHIONED BANANA PUDDING

Recipe
Ingredients:
3/4 cup sugar
2 (heaping) tablespoons flour
1 cup milk
2 egg yolks, (reserve whites for meringue)
1/2 stick butter
a pinch of salt
1 tsp vanilla extract
1 box vanilla wafers
about 6 ripe bananas, sliced
 
Directions:


1.  Mix together sugar and flour in a small bowl, set aside. 

2.  Beat egg yolks with milk (a fork will do nicely) and combine with the sugar/flour mixture in top of a double boiler. (If you don't have a double boiler, a heavy non-stick sauce pan will work). Cook until thick, stirring constantly.

3.  Remove from heat; cool and add vanilla.

4.  Line a dish with vanilla wafers, alternating with a layer of sliced bananas, then more wafers.

5.  Pour pudding over all.

6.  Beat egg whites into meringue (you can add a bit of sugar to sweeten if desired), and spread over layered pudding.  Brown in a 350 degree oven.

Makes 8 servings.


NOTES: Lorianne likes a lot of pudding, so she makes a double batch of the vanilla pudding to pour over the bananas and wafers!

Just for fun, on the show Lorianne and Ronnie made "naughty" and "nice" versions of the banana pudding. Although it is absolutely delicious by itself, to one serving they added chopped fruit like kiwi, strawberries and grapes. That's the "nice" version because it adds healthy fruits. To another serving they added chocolate shavings and pecans. Of course, that is the "naughty" version. Good news, though! Scientific studies show that, even though chocolate and nuts are high in fat, they both have healthy nutrients that protect your heart! So actually, it seems that, in this case, being a little naughty is nice for your health!
