MY NANNA'S CHICKEN AND DUMPLINGS

Tina was the million dollar winner of CBS “Survivor: Australian Outback”!
Ingredients:
4 bone-in chicken breast halves
1 teaspoon salt
½ teaspoon celery seed
1½  bay leaves
lots of fresh ground pepper
canned biscuits (Tina likes Hungry Jack)
1 cup milk
yellow food coloring (Dancing Deer makes organic food coloring)
 
Directions:


1.  Cook the chicken with the first four ingredients in a pressure cooker until the pressure starts, then turn down 1 notch and cook 15 minutes. (On the show, we poached the chicken in chicken broth and the first four ingredients). Drain and reserve the broth.

2.  When chicken has cooled enough to handle, pull the meat off the bone and set aside.

3.   For the dumplings: Roll out biscuits, very thin and cut into 1/2 inch strips. Bring broth to a boil. Add the dumplings and the yellow food coloring. (Tina likes to use the coloring because the milk that is added later turns the dumplings and sauce white.) Cook on high for 5 minutes.

4.  Add some of the milk.  You will notice that the dumplings will shrink.

5.  Add the chicken and let simmer a bit for a thicker broth. Add more milk if broth is too thick for your taste.

Tina says: Warning! This recipe will make you want to slap your mamma! Ha ha!

Lorianne's Dumplings
Ingredients:1 cup all purpose flour
1 cup whole wheat flour
3/4 teaspoon salt
2 tablespoons butter
1 cup whole milk


Directions:
1.  Mix the first three dry ingredients together in a bowl.

2.  Heat the milk with the butter until almost simmering. Add to the dry ingredients and mix with a fork until combined.

3.  Knead with your hands briefly until dough is smooth and ready to be rolled into dumplings.
