MEXICAN CASSEROLE

Ingredients:
2 lbs lean ground beef or ground turkey
1 can Mexi beans
1 pkg. corn tortillas
1 pkg. dry taco seasoning for meat
½ cup water
grated medium sharp cheddar cheese, to taste
 
Directions: Pre-heat oven to 375 degrees.

1.  Brown meat in pan on top of stove. 

2.  Add taco seasoning and water, let simmer.

3.  Lightly oil a round or square casserole dish. 

4.  Layer with a few of the corn tortillas, tearing them to fit the dish, if
     necessary.

5.  Add some of the seasoned meat mixture, add some of the beans, then some of the cheese.

6.  Make another layer and end with the cheese on top. 

7.  Bake for about 25 minutes, or until cheese is bubbly.  Serve with salsa, sour cream, and guacamole.

For a complete meal, add a salad of your favorite lettuce greens topped with a mixture of chopped tomato, chopped onion, a touch of chopped jalapeno, and fresh squeezed lime juice.  And go easy on the jalapeno!
