MARINATED GRILLED CHICKEN, CREAMED POTATOES AND CORNBREAD

Grilled Chicken:
Ingredients: Boneless, skinless chicken breasts (free range if you can find them)
1 bottle of your favorite low-fat Italian dressing (Bev's favorite is Kraft)
Lawry's seasoning salt
 
Directions:
1.  Marinate chicken breats in Italian dressing. Meanwhile, heat a grill or hibatchi, as well as a stove top pan.

2.  Remove chicken from marinade and sprinkle Lawry's seasoning salt to taste. Sear the chicken on the stove top pan before putting it on the hibatchi or grill. This will sear the seasonings into the meat so they won't drip off. Cook until there is no pink in the thickest part of the meat.
Cornbread:
Ingredients:(NOTE: Beverly doesn't measure her ingredients, so watch the show if you can so you can judge amounts)

Self rising flour
Self rising cornmeal
Sugar
Butter
1 egg
Whole milk
Oil
Directions:
Pre-heat oven to 400 degrees.

1.  Pour about a 1/4 inch of oil in a small cast iron skillet. Put the pan in the hot oven.

2.  Meanwhile, mix all ingredients together in a bowl. Remove hot pan from oven and pour in batter. The batter should start sizzling on the edges as the oil begins to cook it.

3.  Return the pan to the oven and cook until just golden brown, about 15 - 20 minutes. At this point, Bev turns the broiler on for just a few minutes to make the top even more golden and crispy. Caution....keep an eye on the cornbread at this point to make sure you don't burn it under the broiler.

When cornbread is done, remove the pan from oven, turn the cornbread onto a plate, and cover with a clean kitchen towel to keep warm.
Creamed Potatoes:
Ingredients:Medium red potatoes
Butter
Mayonnaise
Salt
Directions:(Note: Beverly says to use the amount of ingredients that will serve your number of guests. She normally starts with five pounds of potatoes, then adds enough of the remaining ingredients to give the potatoes a creamy consistency)

1.  Peel and quarter the potatoes. Boil or steam them until tender.

2.  Add mayo, butter, and salt to taste. Mix with an electric hand mixer. Taste and adjust seasonings.

NOTE:  The mayonnaise is an unusual ingredient that really seems to bring out the potato flavor. Serve the creamed potatoes with the grilled chicken, cornbread, and some homegrown tomatoes or vegetables.
