FAMOUS "THREE-IN-ONE" COOKIES

Basic cookie batter:
Ingredients:
5 cups all purpose flour
2 teaspoons salt
2 teaspoons baking soda
4 sticks butter (one pound)
1 cup white sugar
2 cups brown sugar
2 teaspoons vanilla extract
3 eggs
 
Directions:


Preheat oven to 375 degrees.

1.  Combine flour, salt, and baking soda in a bowl and set aside.

2.  Melt the pound of butter in a saucepan. Add white and brown sugars and vanilla to the melted butter and stir thoroughly.

3.  Add eggs and stir until well blended.

4.  Combine the dry ingredient mixture to the butter mixture. Stir until well mixed. Kent says a secret to his great cookies is to let this batter sit, covered, in the refrigerator for a few hours or overnight. From this one batter, you can make three different kinds of cookies: Ginger, Chocolate Chip, and White Chocolate Macadamia Nut.



For Ginger Cookies:

To the pre-made batter add: 2 teaspoons cinnamon, 2 teaspoons cardamom, 12 teaspoons dry ginger, and 3 cups crystallized ginger. Combine well, drop by spoonfuls onto a cookie sheet and bake at 375 degrees for 8 to 10 minutes.  (Yes, it really is 12 teaspoons of dry ginger 3 cups crystallized ginger!)
 


For Chocolate Chip Cookies:

To the pre-made batter add: 1 ½ cups milk chocolate chips, 1 ½ cups semi-sweet chocolate chips, and 2 cups chopped pecans. Combine well, drop by spoonfuls onto cookie sheet and bake at 375 degrees for 8 to 10 minutes.




For White Chocolate Macadamia Nut Cookies:

To the pre-made batter add: 2 cups macadamia nuts chopped into small and medium chunks (use a food processor if you have one), 2 cups white chocolate chips or chunks. Combine well, drop by spoonfuls onto cookie sheet and bake at 375 degrees for 8 to 10 minutes.

 

NOTE: The amounts of ingredients listed above for each cookie recipe are for when you are using the entire batter to make just one type of cookie. If you would like to make all three cookies from one recipe of batter, make sure than you cut the amount of ingredients for each cookie recipe by about 1/3. That is how we did it when we prepared these three cookie recipes on the show.
