Directions: |
1. Make the basic batter by combining all ingredients in a medium bowl.
2. Then add either the pesto, onion bits or relish and bake in greased muffin or cornbread pan for 15 to 20 minutes, or until cornbread is golden brown.
NOTE: If you prefer, you can use your own recipe for the basic cornbread batter, or use a boxed cornbread mix.
For Jeff's tasty variations:
Pesto Cornbread: The Pesto cornbread is the basic batter plus 2 tablespoons of store bought Pesto sauce, or more to taste.
Onion Cornbread: The Onion cornbread is the basic batter plus dehydrated onion bits to taste
Sweet Pepper Apple Relish: This cornbread is the basic batter plus 2 tablespoons of Sweet Pepper Apple Relish (can be found at Cracker Barrel Restaurants), or to taste. Also, add a pinch of garlic salt.
