HOT WATER GINGERBREAD

Recipe
Ingredients:
½ cup butter 
½ cup non-trans fat shortening (like Spectrum)
1 cup sugar
1 cup blackstrap molasses
1 ½ cups boiling water
2 eggs
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoon cinnamon
2 teaspoon ground ginger
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon vanilla extract
 
Directions:


Pre-heat oven to 325 degrees.

1.  In a large mixing bowl beat together butter, shortening, sugar, and molasses until well mixed.

2.  Add water, and eggs, mixing well.

3.  Add flour, baking soda and baking powder, mixing well.

4.  Mix in cinnamon, ginger, nutmeg, cloves and vanilla.

5.  Pour into an un-greased 9 x 12 Pyrex baking dish, or two smaller square ones.

6.  Bake for about 40 minutes or until a knife comes out clean.
