HERBED POTATO SALAD


as cooked by Wild Oats Natural Market Place for Mark Chesnutt
Ingredients:

8 red potatoes, boiled and cut into 1/8 chunks
3/4 up Italian salad dressing
1 yellow onion, diced
1 cup celery, diced
2 cups Kosher Dill Pickles, diced
Salt and pepper to taste
6 eggs (organic if possible), hard boiled and diced
1/4 cup yellow mustard
1/2 cup mayonnaise
1 TBS fresh parsley, finely diced
1 TBS fresh basil, finely diced
1 TBS paprika

 
Directions:

1.  Combine potatoes, Italian dressing, onion, celery, pickles, salt and pepper. Cover and refrigerate for 2 hours.

2.  After refrigerating, add eggs, mustard, mayonnaise and mix well. Finish by sprinkling with the fresh herbs. Garnish with fresh dill if desired.
