HOLLY'S TEXAS TWO-STEP SLAW

Ingredients:
Slaw:

4 cups cole slaw mix (cabbage and carrots)
1 cup shredded purple cabbage
1/4 cup red onion, chopped
1 or 2 jalapenos, seeded and finely chopped
2 tablespoons cilantro, chopped
2 (11-ounce) cans Mexi-Corn, drained
1/2 to 1 cup shredded cheddar cheese

Dressing: 

3/4 bottled ranch dressing
1 tablespoon lime juice
1 teaspoon cumin
cayenne pepper to taste
 
Directions:
1.  Mix together the first seven ingredients in a large bowl.

2.  In a small bowl, combine all four of the dressing ingredients and mix well.
 
3.  Pour the dressing over the cabbage mixture, making sure all of the ingredients are well combined. Chill for 30 minutes to blend flavors.
