Ingredients: |
2 lbs ground beef
2 large white onions
2-3 cloves of garlic
1 green bell pepper
2 fresh jalapeno peppers
2 fresh red chilies
1 habanero pepper
2 cans of mushrooms (stems and pieces work well)
salt and pepper to taste
garlic salt, to taste
1/2 cup red wine
2 TBS olive oil
dried oregano, to taste
chili powder, to taste
cayenne pepper, to taste
1 can whole stewed tomatoes
1 can tomato paste
1 large bottle of tomato juice
1 can chili beans (Hot)
1 can chili beans (Mild)
1 can red kidney beans
allspice, to taste
2 tsp sugar
tabasco sauce for topping
shredded cheddar cheese for topping
sour cream for topping

Directions: |
1. Chop onions, setting aside one half for later. Seed and chop all the fresh peppers and the garlic cloves. Place chopped fresh vegetables in a large pot with olive oil and red wine. Cook for 2 - 3 minutes over medium high heat.
2. Add ground beef and mushrooms with their liquid. Cook until meat is browned. Do not drain.
3. Start adding spices to taste: garlic salt, oregano, cayenne pepper and chili powder. (Start with a very small amounts of cayenne and chili powder. They're hot!) Add 2 tsp allspice and 2 tsp sugar.
4. Add the stewed tomatoes with their juices and the tomato paste. Add some of the tomato juice slowly until you have the consistency you like, either thick or saucy. Add all of the cans of beans along with their juices. Stir this together, heat through and taste.
5. This is the most important part of making great chili. Add more of the seasonings and spices until you get the taste you like. Let the pot of chili simmer for an hour or two, and continue to tweak the spices if you want to. If you like it spicy, add more cayenne and/or chili powder. To cut the spice, add more sugar and a bit of allspice to get a sweeter taste.
You can make this the day before, or put it in a crock pot in the morning for dinner that night. Remember, great chili is in NO HURRY!
Top your chili with finely chopped onion (the one you set aside earlier), add a little Tabasco, shredded cheese, and /or sour cream. Enjoy. Then take a nap!
