GUACAMOLE

Ingredients:
6 - 8 very ripe avocados (Soft to the touch. If you have to buy them firm,
    leave them in a paper bag overnight with a banana and it will ripen them.)
1 large white onion
light sour cream
high quality extra virgin olive oil
garlic salt
salt and pepper
cayenne pepper
1 fresh whole jalapeno
1 fresh red chili pepper
1 fresh banana pepper
1 large fresh tomato
black olives
1 small bunch fresh cilantro
1 fresh lime
high quality sturdy tortilla chips
 
Directions:
1.  Very finely chop onion and all the peppers (Use gloves! The peppers are hot!).  Set aside.

2.  Cut avocados in half, remove the pit and scrape out the meat, placing it in a large glass bowl.

3.  Add 1 -2 TBS olive oil to avocado. Squeeze the juice of one lime over the avocado. Add one scoop of sour cream. Mash all ingredients together with a pronged fork to desired consistency. Add the chopped onions and start with half of the peppers. You can add more later if you want the guacamole to be hotter.

4.  Start adding seasonings and spices to taste: salt, pepper, garlic salt, and cayenne. Add and mix until you have the taste you like.

5.  Finely chop tomato and olives. Place a mound of chopped tomato on the guacamole and place chopped olives on tomatoes. Garnish with a bit of fresh cilantro. Serve with chips.
