GOODY BOWL SOUP

Salsa is the base of this easy and healthy soup
Ingredients: 1/2 lb lean ground beef
1 cup chopped yellow onion
salt and pepper to taste
2 cans (15 oz) pinto beans, drained and rinsed
3 cups vegetable broth or beef broth
1 cup salsa (your favorite brand -- Lorianne's is Glen Muir Chipotle Salsa)
Your favorite vegetables, such as frozen corn, chopped zucchini or yellow squash, green beans, chopped cabbage
 
Directions:
1.  In a large pot, cook meat and onion over medium heat until the meat is no longer pink.  If meat starts to stick, add a little broth or oil.  Season with salt and pepper.
 
2.  Add beans, broth, salsa and your favorite veggies.  Simmer on medium-low, uncovered for about 15 minutes to blend flavors.
 
3.  (Optional) Top with fresh avocado slices or a small dollop of sour cream or plain yogurt.




A few years ago I learned a great soup trick.  Salsa makes an incredibly delicious soup base because of its kick and complex blend of flavors.  This soup is quick, easy and delicious.  Add your own combination of fresh or frozen vegetables for a healthy soup that doubles as a nutrient-packed lunch or a zippy snack.
