GARLIC AND HERB BROILED CHICKEN

Ingredients:
4 boneless, skinless chicken breasts
6 tablespoons salted butter, divided
2 teaspoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon white pepper
3 tablespoons Tracy Byrd's Garlic and Herb Marinade
1/4 pound mushrooms, sliced
1/2 cup white wine
 
Directions:
Preheat broiler.

1.  Roll the chicken breasts about a half inch thick using a rolling pin or pound evenly with a kitchen mallet.

2.  Melt 4 TBS butter with the lemon juice, Tracy's Garlic and Herb Marinade, salt, and white pepper.

3.  Broil the breasts for 6 to 8 minutes on each side basting with the sauce.

4.  Saute the mushrooms in the remaining 2 tablespoons butter, add the white wine, and cook down slowly.

5.  When the chicken breasts are done, remove to a hot platter and pour the broiler pan drippings into the mushroom saute, stirring to combine. Simmer for 2 to 3 minutes.

6.  Pour the combined drippings and mushrooms over the chicken breasts and serve with Orange Candied Yams, or side dishes of your choice.
