Directions: |
1. In a deep fryer or large pot of vegetable oil, place sweet potato slices and cook until golden brown. Drain on paper towels or a brown paper sack.
2. Sprinkle with cinnamon sugar.
****NOTE: If you happen to have a large, deep cast iron skillet, use it. Cast iron is known to produce wonderful fried foods. Make sure the oil is hot, about 350 degrees, before adding the sweet potatoes. Hot oil makes foods crispy without being excessively greasy.
