HOLIDAY PUMPKIN PIE

Ingredients:
2-3 small pumpkins or 4 to 5 cups of canned pumpkin
1 cup sugar
1 cup eggnog
1 2/3 cups evaporated milk
4 eggs
1 tsp salt
2 tsp cinnamon
1 tsp ground ginger
1 tsp ground cloves
1 tsp allspice
1 tsp nutmeg
2 pie crusts, uncooked (ready made or homemade)
 
Directions:
Mix all ingredients together (see note below if using fresh pumpkins) and pour into the unbaked pie crusts. (NOTE: Dan says you may want to add the spices a little at a time and taste the batter to make sure you get the right blend of spices for your taste. On the show he ended up using a little less clove for his personal taste). Bake for 15 minutes at 450 degrees, then lower oven temperature to 325 and bake for another 45 minutes or until knife comes out clean.

Makes two pies.


A note about using whole pumpkins. To cut them in half, place a meat cleaver in the middle of the pumpkin and hammer down on the cleaver with a rubber mallet until the pumpkin is cut in half and BE CAREFUL! Cover each pumpkin half with foil, place on a baking sheet and bake in a 350 degree oven for one hour or until soft. Scoop cooked pumpkin meat from shell and continue with the recipe above.
