Chunky Guacamole

from Joe Nichols
Joe likes his Guacamole chunky!
Ingredients:

4 Avocados, pitted and peeled  (See directions below.)
1 Lime
1 to 2 Tomatoes, cut in chunks
“Punch” of garlic salt (A pinch is between your fingers. A punch is a pile in the palm of your hand!)
Onion to taste, chopped.  (Joe used at least a half an onion.)
Chopped cilantro

Directions:

Joe cuts the avocados in half, around the pit, and then takes out the pit. He then slices the halves into quarters, and peels the meat of the avocado away from the rind. Toss the avocado pieces into a bowl. Don’t chop!

Cut the lime in half and squeeze the juice from both halves onto the avocado. Add your punch of garlic salt. (Joe poured a good portion into the palm of his hand. He then added more later!) Joe then pulls a knife through the mixture, cutting up the big chunks, being careful not to mush the avocado, since he likes his guacamole chunky.

Taste test. If you’re happy with the taste, add in the chunks of tomato, chopped onion and chopped to your taste. Again, pull your knife through the mixture, instead of stirring it, to keep the avocado from getting mushy. Taste test again, and add more seasoning if needed. Enjoy!
