SPICY CHICKEN ROLL-UPS

Ingredients:
2 skinless, boneless chicken breasts
salt and pepper
olive oil
Low carb tortillas, large size
1½  cups Hot and Spicy Pork Skins, crushed
1 cup Ranch dressing
1 cup tomatoes, sliced thin
1 cup lettuce, whole leaves
1 Tablespoon hot sauce
1 avocado, sliced thin
 
Directions:

 

1.  Season chicken with salt and pepper. Pan cook in a small amount of olive oil.

2.  Meanwhile, pour Ranch dressing into a casserole dish. Add the hot sauce and mix together.

3.  Slice cooked chicken into long 1/4 inch thick strips, then roll them in the ranch dressing/hot sauce mixture until completely covered. Then roll them in the crushed pork skins.

4.  Place a tortilla on a plate. (You can warm the tortillas if you wish).  Place a large lettuce leaf on top. Add thin slices of tomato, avocado, and some of the chicken pieces. Folding in the sides, roll the tortilla, keeping the ingredients in place with your fingers as you tightly roll. Slice in half and enjoy!

Serves 4 to 6.
