CARBURETOR BURRITOS

This is a specialty in New Mexico where Lynn lives!
Ingredients:
Leftover meat and/or cooked vegetables
Chopped onion
Chopped garlic
Fresh cilantro, minced
Monterey Jack cheese
Flour tortillas
Salsa
 
Directions:


1.  Use any left-over meat ... chopped beef, chicken, pork, shrimp, or fish, or use leftover cooked vegetables, or both!  Place in a medium bowl.

2.   Add some chopped onion, a little chopped garlic, and a "teeny" bit of fresh minced cilantro. Mix to combine. 

3.  Soften flour tortillas for thirty seconds on an open gas burner, or a real "comal". (That's a black-iron skillet).  Tortillas can also be softened on the stovetop in a skillet, or in the microwave. 

4.  Place about two tablespoons of your meat/vegetable mixture along the middle of a flour tortilla. Add some Monterey Jack cheese, and "roll it up" like a cigar! Then, wrap each Burrito in foil.  These taste wonderful with Lynn Anderson’s Nacho Mama's Salsa! 

These burritos are great to take on short trips or picnics.  Lynn claims you can wrap them in foil and place them on the "hottest" part of your man's (car) engine! By the time you get to wherever you're going lunch will be Hot & Ready!
