BROCCOLI CORNBREAD

From Mel's cookbook: Mel's A-Cookin'
Ingredients:
5 eggs, beaten
1 large onion, chopped
1 cup green and red bell pepper, chopped
1 head fresh broccoli florets, chopped fine (about 10 ounces)
1 1/2 sticks butter, melted
2 cups cottage cheese
2 tablespoons sugar
Two 7 ounce packages Jiffy cornbread mix
Paprika, for sprinkling
 
Directions:
1.  Mix all ingredients (except paprika) together in a large bowl.

2.  Pour mixture into a greased 9 x 12 pan. Sprinkle paprika over the top.

3.  Bake for one hour, or until good and brown on top. Let cool slightly. When the cornbread is still warm, cut into squares and serve.

Mel likes to eat this cornbread with maple syrup on top! I tried it and loved it, too!
