BLACKENED CATFISH

Recipe
Ingredients:
1 1/2 pounds catfish fillets
4 tablespoons unsalted butter
3 tablespoons dried oregano
2 tablespoons Tracy Byrd's Ultimate Seasoning
2 tablespoons Tracy Byrd's Garlic Pepper Seasoning
6 tablespoons Tracy Byrd's Smokin' Cajun Seasoning
    (Use 4 tablespoons if you like it mild)
Oil for pan
Lemon wedges
 
Directions:
1.  Mix all the seasonings well in a small bowl.

2.  Melt the butter, place in a shallow dish, and dip the fillets. Coat well with the seasoning mixture.

3.  Heat an iron skillet on high with a small amount of oil. Cook fillets 3 minutes on each side. (There will be a lot of smoke!)

Serve with lemon wedges.
