Preheat oven to 350 degrees.
1. Cut pieces of aluminum foil large enough to wrap each fish filet. Brush foil with olive oil.
2. Place each piece of fish on a piece of foil, brush fish with oil. Season with salt and pepper.
3. In a small bowl, toss together garlic and herbs. If desired, you can blend the herbs and garlic in a blender to make a paste or pesto.
4. Cover each piece of trout with the garlic-herb mixture or paste. Place lemon slices on top and wrap each filet tightly in the foil.
5. Place fish in a baking dish, and bake in oven until fish is cooked through and flaky, about 20 minutes.
6. Remove from oven. Remove foil. Drizzle with a bit more olive oil and serve with lemon wedges.
