BAKED AMARETTO CHICKEN

Ingredients:
5 boned chicken breasts
3 tablespoons flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground pepper
2 teaspoons paprika
a pinch of garlic salt
1 tablespoon vegetable oil
3 tablespoons butter
1 1/2 Tablespoon Dijon mustard
1 can 6 1/4 ounce frozen orange juice
1 cup Amaretto liqueur
 
Directions:

Preheat oven to 350 degrees.

1.  Mix the can of frozen orange juice with a half can of water.

2.  Combine flour, salt, pepper, paprika and garlic salt.

3.  Coat chicken with this mixture (the flour, salt, pepper, paprika and garlic salt).

4. Heat oil and butter in skillet and saute chicken until brown.  Remove and place in casserole dish.

5.  To the same skillet, add mustard, orange juice and Amaretto. Increase heat and boil, stirring constantly, until thick.

6.  Pour the sauce from the skillet over chicken and bake, covered, for 45 minutes.

Yields 8-10 servings
