AUNT HONEY'S BAKED ZITI with Meat Sauce

Ingredients:
1 large can of tomato sauce
1 large can of crushed tomatoes
1/2 cup Extra Virgin Olive Oil
1 clove garlic, chopped
1/2 onion
1 lb ground sirloin
fresh basil
fresh oregano
salt and pepper
1 cup red wine (a good drinking wine, not cooking wine)
1 lb. Whole milk ricotta cheese
2 eggs
1 lb. Mozzarella
1/2 cup fresh parsley, chopped
1 cup grated romano cheese
1 lb. Ziti (tube pasta)
 
Directions:
1.  In a large pot, heat the olive oil. Add onion and garlic, simmer until tender.

2.  Add ground sirloin and brown. Add 1/2 tsp each of salt and pepper. Add the tomato sauce, the crushed tomatoes and the wine. Stir to mix.

3.  Chop fresh basil and oregano to taste, stir them into the pot and let simmer for 30 to 40 minutes.

4.  In the meantime, boil a large pot of water, add ziti and cook al dente.

5.  While ziti is cooking, in a large bowl, mix ricotta and two eggs. Chop half the mozzarella into small pieces and mix into the ricotta/egg mixture. Mix in parsley and romano cheese.

6.  Drain the ziti and put it back into the large pot. Add the ricotta mixture to the ziti and mix. Add most of the meat sauce and mix.

7.  Pour into a baking dish and top off with the rest of the meat sauce. Lay thin slices of mozzarella on top. Bake at 350 degrees for about 30 minutes.
