DRUNKEN MARINATED SALMON

For the salmon:
Ingredients:

Wild Alaskan Salmon filet, skin removed
Jack Daniel's Whiskey
Williams-Sonoma Sweet Soy Glaze
Fresh ground pepper
Garlic powder
2 tablespoons butter 
 
Directions:
1.  Place the fish in a glass baking dish and and pour some whiskey over the top (about 1/4 cup or so).

2.  Spread some of the Sweet Soy Glaze on the fish, then sprinkle with ground pepper and garlic powder to taste. Cover and marinade in the refrigerator for at least two hours.

3.  Cook in skillet with butter for about 20 minutes, turning once.

This is great served with Billy's garlic mashed potatoes and Asian asparagus.

For the potatoes and asparagus:
Ingredients:
Asparagus
Williams-Sonoma spicy peanut sauce
Potatoes
Roasted garlic
Butter
Milk (or Half and Half or cream -- makes the potatoes thicker and tastier)
Salt
Pepper
Directions:
Asparagus - In a separate skillet, cook for 10-15 minutes in Williams-Sonoma spicy peanut sauce.

Garlic Mashed Potatoes - cut and boil potatoes, mash, add roasted garlic, butter, milk, salt and pepper. Use all ingredients to your personal taste and servings needed.
